Elizabeth Somer is a registered dietitian and award-winning author who has published 11 books and has written more than 300 articles and has been published in national magazines. A leading authority on nutrition and diet, she appears frequently on nationally-syndicated news and talk shows, and speaks as a keynote and panelist for organizations and industry groups. She also provides guidance for Research of the National Watermelon Promotion Board.

Elizabeth is also very talented in the kitchen! She has come up with a few recipes utilizing watermelon in fun and fanciful ways. A few of the most recent on-trend dishes include Watermelon Poke Bowl, Watermelon Chia Seed Muffins and Watermelon Crunch Smoothie Bowl.
