Watermelon Citrus Soup

The aromatic flavors of lime, lemon, and mint accompany this decadent watermelon dish.

  • 1 box lemon-flavored gelatin mix
  • 1 box lime-flavored gelatin mix
  • 2 cups boiling water
  • 6 cups seedless watermelon puree, chilled
  • 3/4 cup fresh mint leaves

Place the gelatin mixes in a heatproof bowl and pour in the boiling water. Stir until dissolved. Stir in the watermelon puree* and divide among 6 to 8 serving bowls. Sprinkle the mint over the tops of each bowl and serve immediately.

*To make the watermelon puree, remove seeds from fresh watermelon and cut into large chunks. Place in a blender and process until smooth and well pureed.


Makes 6 - 8 servings.


You are mixing equal amounts of Yellow + Green + Pink and that makes brown. It tastes great but looks horrible. Next time, I would try orange jello instead of the lime.
