Feta Bruschetta

  1. In a bowl toss together olive oil, watermelon, cheese, chives, mint, vinegar, and salt and pepper to taste and mound about 1 tablespoon on oiled side of each toast.

  1. Prepare grill or preheat broiler.
  2. With a serrated knife cut bread crosswise into 1/2-inch-thick slices.
  3. Combine the oil and garlic together and spread it on one side of the cut bread.
  4. Arrange bread slices in one layer in a shallow baking pan and bake in middle of oven until golden, about 10 minutes.

I’ve made this several times and it’s a huge hit. I sometimes mix some fresh basil in as well. Love it.

On my way to making this for a hot afternoon visit with my fabulous friend. One thing to note is I broiled the sliced baguette at 350F and they were super ready by 4 mins. Not sure the temperature this recipe is saying to toast them at, but if I let them go the full 10 mins they would have been burnt. I’ll update my review once we’ve enjoyed them. This does sound super yummy and perfect for a hot summer afternoon visit!
