Name: Roasted Watermelon Rind Parmesan
Ingredients: 5 cups peeled and chopped watermelon rind, 1 to 1-1/2 inch pieces; 2 tablespoons olive oil; 1 teaspoon kosher salt; 1/4 rounded teaspoon coarsely ground black pepper; 1/3 cup shredded Parmesan cheese; 1 tablespoon fresh lemon thyme leaves (may use regular thyme); 2 teaspoons finely chopped fresh rosemary leaves; 3/4 teaspoon sherry vinegar
