- Cut the rind into 1-2 inch pieces.
- Heat ghee in a wok.
- Add fenugreek, cumin, mustard and curry. Allow the seeds to splutter or turn light brown. Do not let them burn.
- Add ginger and turmeric and fry for 10 seconds.
- Add watermelon rind, asafetida, chili flakes, salt and sugar. Mix thoroughly and stir fry for a minute or two on high flame.
- Reduce heat and cook until soft, stirring often for about 3 minutes.
- Add and mix lemon juice and Garam Masala to adjust seasoning.
- Garnish with cilantro, a dollop of yogurt and serve hot with naan.
