Name: Fried Watermelon with Wakami Salad, Cilantro Vinaigrette, Pickled Radish
Ingredients: 6 lbs. seedless watermelon, cut into 12 -5" long, 1-½" sq. rectangles (approx. 7-8 oz. each); 1 cup all purpose flour; 4 large eggs, beaten; 3 cups panko breadcrumbs; 2 ¼ lbs. (6 cups) wakami salad; 3 radishes; 6 tablespoons rice wine vinegar; ¾ teaspoon granulated sugar; Cilantro Vinaigrette (recipe follows); Cilantro sprigs for garnish; ¾ cup cilantro leaves (for Cilantro Vinaigrette); 6 tablespoons parsley leaves (for Cilantro Vinaigrette); 6 tablespoons chopped scallion, green part only (for Cilantro Vinaigrette); ¾ teaspoon lime juice (for Cilantro Vinaigrette); ½ cup grape seed oil (for Cilantro Vinaigrette); Salt to taste (for Cilantro Vinaigrette)
