This coleslaw can be made using a food processor to shred the rind – making it quick! Our favorite way to enjoy it is on simple grilled fish tacos, as pictured, but it’s also tasty on hot dogs and can hold it’s own on a plate of BBQ!

  1. Cut watermelon from rind and cut the flesh into 1/2-inch chunks. Place 1-1/2 cups in a bowl and set aside remaining watermelon.
  2. In a food processor with a shredding attachment, shred watermelon rind; place in a large bowl (you should end up with about 6 cups).
  3. In a small bowl, whisk oil, vinegar, sugar, and salt. Pour oil mixture over rind and toss until evenly coated. Stir in watermelon chunks (from the bowl); let chill at least 1 hour before serving.
