Watermelon Fennel Salad

Recipe created by Amanda Scarlati, chef and author from Scarlati Family Kitchen. This light and refreshing Watermelon and Fennel Salad is layered with shaved parmesan cheese and toasted pine nuts. Finished off with a zesty orange and mustard dressing, this salad is perfect for any meal.

  1. Combine watermelon cubes, sliced fennel, toasted pine nuts, and parmesan cheese in a serving bowl and gently toss to combine.
  2. In a small bowl, combine orange juice, basil, dijon mustard, and kosher salt and whisk together.
  3. Pour the dressing over the top of the salad and gently toss to coat.
  4. Let the salad sit in the refrigerator for 30-60 minutes and then serve.

Pine nuts can be toasted in a pan over medium heat on the stovetop for a few minutes, stirring occasionally, until lightly browned. Salad can be served right away, if needed, but will have better flavor if it sits for an hour before serving.
