- On a cutting board, cut the top and bottom off each watermelon. Working with 1 watermelon at a time, cut rind off watermelon, then cut watermelon to resemble a cake-shape. This will be the base of the cake.
- Repeat with remaining watermelon, cutting 2- to 3-inches smaller than the base to create a tiered cake layer.
- Place smaller watermelon layer on top of watermelon base.
- Top watermelon cake decoratively with fruit and mint. Arrange remaining fruit decoratively around bottom edge of watermelon cake. Slice and serve.
