- Place cubed watermelon in an even layer on parchment paper-lined rimmed baking sheet. Freeze for 2 to 3 hours until firm.
- Combine frozen watermelon, coconut milk, orange juice, lime juice and simple syrup in blender and blend, scraping down the sides as needed until smooth, about 1 minute.
- Divide daiquiri between 4 cocktail glasses. Garnish with watermelon wedges and serve.
